蒸白咖啡蛋糕 Steamed White Coffee Layer Cake

Ingredients

材料:

  • 蛋 5粒
  • 幼糖 100g
  • 面粉 150g
  • 盐 1/8小匙
  • 白咖啡精 1包(32g)
  • 热水 50ml

Ingredients:

  • Egg 5
  • 100g caster sugar (I use molasses sugar)
  • 150g flour
  • Salt 1/8 tsp
  • White coffee (32g)
  • Water 50ml

Steps

  1. 把面粉和盐混合,过筛备用。
  2. 白咖啡精加入热水里,搅拌均匀,待凉。
  3. 以高速将蛋打至起泡,分次加入糖打至松发变白,蛋糊三秒才滴下,说明打得够发,改用慢速打5分钟至幼滑。
  4. 分三次加入面粉轻轻拌匀,将面糊分成3份,两份加入白咖啡糊,一份保留原色。
  5. 咖啡面糊用大火蒸15-20分钟,打开蒸盖,倒入白色面糊,蒸15-20分钟。
  6. 最后再倒入咖啡面糊蒸15-20分钟至熟为止。
  7. (用竹签插入蛋糕中间,没沾着面糊代表蛋糕已经蒸熟)
  8. Sift the flour and salt into a mixing bowl.
  9. Stir White Coffee with hot water, set aside.
  10. Whisk the eggs till foamy and add in sugar gradually whisk till stiff peaks.
  11. Pour the egg mixture into the flour and stir till well combined. Seperate the batter into 2 bowls. Add the white coffee mixture into one of the batter.
  12. Pour the Coffee batter into prepared pan and place it in the steamer with high heat for 15-20 minutes, pour the original batter on top, steam for another 15-20 minutes until cooked.
