- 蛋 5粒
- 幼糖 100g
- 面粉 150g
- 盐 1/8小匙
- 白咖啡精 1包(32g)
- 热水 50ml

- 150g flour
- Salt 1/8 tsp
- White coffee (32g)
- Water 50ml
Steps
- 把面粉和盐混合,过筛备用。
- 白咖啡精加入热水里,搅拌均匀,待凉。
- 以高速将蛋打至起泡,分次加入糖打至松发变白,蛋糊三秒才滴下,说明打得够发,改用慢速打5分钟至幼滑。
- 分三次加入面粉轻轻拌匀,将面糊分成3份,两份加入白咖啡糊,一份保留原色。
- 咖啡面糊用大火蒸15-20分钟,打开蒸盖,倒入白色面糊,蒸15-20分钟。
- 最后再倒入咖啡面糊蒸15-20分钟至熟为止。
- (用竹签插入蛋糕中间,没沾着面糊代表蛋糕已经蒸熟)
- Sift the flour and salt into a mixing bowl.
- Stir White Coffee with hot water, set aside.
- Whisk the eggs till foamy and add in sugar gradually whisk till stiff peaks.
- Pour the egg mixture into the flour and stir till well combined. Seperate the batter into 2 bowls. Add the white coffee mixture into one of the batter.
- Pour the Coffee batter into prepared pan and place it in the steamer with high heat for 15-20 minutes, pour the original batter on top, steam for another 15-20 minutes until cooked.
