Butternut Squash Steam Cupcakes

Ingredients

  • 100 g butternut squash steamed and mashed
  • 60 g sugar (cut down to 50g)
  • 2 no large eggs
  • 2 tbsp fresh milk
  • 1 1/2 tbsp grapeseed oil (replaced with olive oil)
  • 90 g self raising flour
  • 1 tsp baking powder

Steps

  1. Steam butternut squash till soft and mash
  2. Whisk with sugar until it well combined, add in egg one by one.
  3. Add in oil and milk
  4. Shift in flour and baking powder and mix evenly (Do not over mixed)
  5. Pour batter into paper cup and steam for 12 min.
  6. Test with toothpick and it come out clean means done
