Chocolate  Black Forest cupcakes

Ingredients

  • For the cake
  • Ingredients A:
  • 100g Cake Flour
  • 20g organic Cocoa Powder
  • 40g molasses sugar
  • 3/4 tsp Baking powder
  • 1/4 tsp Baking Soda
  • 4 Egg Yolks (room temperature)
  • 65g Fresh Milk
  • 45g any oil ( i'm using macadamia oil )
  • Ingredient B:  
  • 4 Egg White (room temperature) 
  • 1/4 tsp lemon juice
  • 40g molasses sugar
  • For the filling. ..
  • 2 cup. fresh or frozen blueberries
  • 100g sugar
  • 1.5tbsp. cornstarch or 3 tbsp. flour
  • 1/4 tsp. cinnamon
  • 1/4tsp. grated nutmeg (optional )
  • 1/2 cup of water
  • 1 tbsp. lemon juice
  • (Alternative you can just use jam for replacement, but for my baby I start all from stretch :) )
  • For the frosting..
  • 200g of whip cream
  • 50g of dark chocolate chip
  • 20ml of milk

Steps

  1. 1. Prepare 12 cupcakes liner
  2. 2. Preheat the oven at 140 degree celcius, top and bottom heat. 
  3. 3. Prepare Ingredient A - Using a hand whisk, mix the dry ingredients in a bowl, followed by mixing the wet ingredients in another bowl. Add both dry and wet ingredients together and mix till well combined. 
  4. 4. Prepare Ingredient B - Use an electric stand mixer and whisk the egg whites and lemon juice till bubble stage, add in sugar gradually 1/3 at a time and beat until soft peak. (ensure egg white does not come into contact with any egg yolk, water or oil or the meringue will not be successful.)
  5. 5. Using a rubber spatula, fold in the meringue into Ingredient A, 1/3 at a time, each time mixing well before folding in the next 1/3. 
  6. 6. Pour the cake into cup liner, tabletop a few times to release the bigger air bubbles.
  7. 7. Bake for 20min at lower rack. (Once done side aside for cooling)
  8. Filing..
  9. 1.Prepare the filing, Mix dry ingredients in saucepan. Add water gradually. Bring to a boil, add blueberries and cook 4 to 5 minutes until clear and thickened, stirring constantly Remove from heat, add lemon juice. Set aside to cool
  10. Frosting...
  11. 1.prepare filling by melting chocolate and milk using stirring from the centre of the pot alternative you can use microwave to heat for 20 sec. (Not advisable for baby using mircowave)
  12. 2.allow melted chocolate to cool
  13. 3.whip whipping cream till you achieve soft peaks. add in cooled melted chocolate, and continue beating till stiff, shiny peaks form
  14. Assemble....
  15. 1.transfer blue berry filling into piping bag fitted with nozzle. Insert nozzle into centre of cakes. Squeeze just enough cream to slightly puff up cakes. Rotate cakes as you pipe so that filling is nicely centred. Chill till ready to serve.
  16. 2. Transfer whipping cream into pipping bag fitted with any ur favourite nozzle. Pipe and design ur liking.
  17. 3. Decor with cherry on top of ur frosting .
  18. Tadaa...yum yum chocolate black forest cupcake presented. Enjoy !
