FRENCH STYLE KIWI CREPE CAKE

Ingredients for crepe :

225 gm  –  Fresh Milk
125 gm  –  Eggs
65 gm  –  Plain Flour
28 gm  –  Icing Sugar
A Pinch  –  Salt
30 gm – Butter (Melted using double boil / microwave)

1)  Place fresh milk, eggs, plain flour, icing sugar & salt into a mixing bowl, stir well manually until batter is smooth.
2)  Rest the batter for 30 minutes.
3)  Add in butter & mix well just prior to frying crepe.
4)  Heat a non – stick frying pan over medium heat till the pan is hot.
5)  Pour a little batter just enough to cover the pan, tilting it so that just a thin layer of batter cover the base.  Cook crepe till underside has set, remove from pan.
6)  Repeat process till batter finish.

Ingredients for filling : 

300 gm  –  Non Dairy Fres Whipping Cream
2 nos  –  Fresh Kiwi (peeled – you can either slice or make it into puree)

1)  Whip fresh cream then add in kiwi puree (if you choose puree)
2)  Lay cake board on the turntable.  Place 1 pc of crepe on it, spread a thin layer of cream then stack another piece of crepe.  Next, spread a thin layer of cream and repeat till the third layer, spread some kiwi slice. repeat process till the end.
3)  Clingfilm and keep cake chilled overnight.
4)  Decorate the cake according to your choice.

Tips :

you can use mango/ peach/ strawberry/ banana/ pumpkin/ sweet potato/ cranberry/ pamelo/ blueberry/ blackcurrant/ Prune/ Avocaso/ Yam/ Durian/ Jackfruit/ cream cheese/ red bean paste/ mung bean paste/ pastry cream according to your favourite fruit & flavour.

Cream Cheese Filling :

200 gm  –  Non Dairy Fres Whipping Cream
120 gm  –  Cream Cheese
2 tbsp  –  Icing Sugar (can omitted if you don’t like too sweet)

1)  Whip fresh cream & site aside.
2)  Beat cream cheese with icing sugar until soften.
3)  Mix above until well combined.
