Mini Egg Cake

Ingredients

Make 15 pcs

  • 4 large eggs
  • 90g castor sugar or fine sugar (do not use icing or powderd sugar)
  • 180g all-purpose flour
  • 1 tsp baking powder
  • 35g Oil (I used VCO)
  • 1 tsp pure vanilla extract optional

Steps

  1. Preheat the oven to 350F or 180C.
  2. I used fork to make a hole on top of the egg, pour out the egg & put aside.
  3. Whip eggs and castor sugar at medium speed until light and fluffy.
  4. Fold in sifted flour mixture (all purpose flour and baking powder) with rubber spatula until well combined.
  5. Add oil lastly and mix until well combined.
  6. Pour into egg shell or floured muffin moulds, or paper lined muffin cups.
  7. Bake at the middle rack of the oven for 20 minutes. I used small size muff mould to make it stand.
  8. Set aside to cool then remove the egg shell.
