Ingredients
Make 15 pcs
- 4 large eggs
- 90g castor sugar or fine sugar (do not use icing or powderd sugar)
- 180g all-purpose flour
- 1 tsp baking powder
- 35g Oil (I used VCO)
- 1 tsp pure vanilla extract optional
Steps
- Preheat the oven to 350F or 180C.
- I used fork to make a hole on top of the egg, pour out the egg & put aside.
- Whip eggs and castor sugar at medium speed until light and fluffy.
- Fold in sifted flour mixture (all purpose flour and baking powder) with rubber spatula until well combined.
- Add oil lastly and mix until well combined.
- Pour into egg shell or floured muffin moulds, or paper lined muffin cups.
- Bake at the middle rack of the oven for 20 minutes. I used small size muff mould to make it stand.
- Set aside to cool then remove the egg shell.
