Parmesan cheese bun

Ingredients

Bread dough

  • 1 cup of bread flour - scope out 3.5 tablespoon of bread flour and replaced with cake flour
  • 1/3 cup warm milk (melt in 1/2 teaspoon instant yeast)
  • 2.5 tablespoon grated Parmesan cheese
  • 1/2 teaspoon mixed herbs
  • 1/2 teaspoon salt

Bread topping and brushing

  • Shredded cheddar cheese (I mixed orange and yellow colour cheddar cheese)
  • 10g melted butter
  • dry parsley flakes

Steps

  1. In a big bowl, pour in flour then cheese, mixed herbs then warm milk with yeast. Mix well then lastly sprinkle in the salt.
  2. Knead for about 30-45 mins till the dough become a bit wet and shinny.
  3. Form into a big ball dough and let it proof for about 60-75 mins till it become double in size.
  4. Punch down the dough to release the air, then roll and cut it into small pieces and start shaping.
  5. After shaping, second proofing for about 45-60 mins.
  6. Brush the top with melted butter, cheddar cheese and parsley flakes.
  7. Bake at 175 degrees C for 35 mins and 5 mins at 200 degrees C in order to get crunchy bites. (Baking temperature and time vary for different oven as I saw most of the baking time is only 25 mins at 175 degrees C, so do adjust according to your oven)
