Ingredients for 4 cupcakes
- 2 eggs
- 1/3 cup bread flour
- 2 1/2 tablespoon caster sugar
Steps
- Separate egg yolk and egg white. Preheat the oven at 180 degree C.
- Whisk egg white with sugar till ribbon stage (stiff peak). Stiff peak egg white mixture will not fall down even you turn the container upside down.
- Add in egg yolk one by one and mix well with a spatula.
- Add in bread flour by 3 batches and fold well with a spatula.
- Bake in the oven for 35-40 mins. (baking time will be different depending on the oven brand and model, as original recipe call for 25-30 mins only. My cake seem uncooked at 30 mins so i extended the time to about 40 mins).
