Steamed Moist Banana Cake

Ingredients

  • 2 eggs
  • 2 tbsp sugar
  • 5 tbsp (85g) melted butter or vegetable oil (or mixture of butter and oil)
  • ** I use grapeseed oil this round
  • 200g bananas mashed with 3tbsp milk (weighed without skin)
  • ** if you prefer more fluffy cake, you can reduced to 150g, but I prefer heavier banana taste)
  • 125g cake flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Steps

  1. Sift the flour, baking powder, baking soda in a big bowl, set aside.
  2. Mash the bananas with a fork. Add 3 tbsp of milk/yogurt while mashing the banana. Set aside.
  3. Beat eggs with fork until got bubble. Don't over beat..add in sugar and oil, mix with the fork.
  4. Add in mashed bananas, mix well using a spatula.
  5. Finally fold in sifted flour mixture using a spatula. Fold from bottom of the bowl.
  6. Prepare the steamer/pot 10 minutes in advance and make sure the water is boiling before you put in the cake.
  7. Pour the cake batter into a lined/greased 6-inch round cake pan and steam at medium heat for 35 min.

Extra notes

Tips :
1) Don't user mixer as over beat will cause the cake sink. just use fork, less thing to wash..
2) use room temp eggs.
3)Ensure you cover the lid with towel/foil before start steaming.
4) I lined my cake pan with baking paper as I prefer mess free.
5) do not open the lid for the first 35min..once done, open the lid fast and test with toothpick, it should come out clean. Remove from steamer immediately..
