Baked Veggie Omelette

Ingredients

  • 20g Shredded Cheddar Cheese
  • 1/2 Red Capsicum - cut into small cubed
  • 1/2 carrot - cut into small cubed
  • 2 Eggs
  • 1/2 tsp dried parsley

Steps

  1. Preheat the oven to 150c
  2. In a medium bowl, mix cheese, capsicum & carrot together
  3. Divide this mixture into mini muffin cups.
  4. Mix the eggs and dried parsley together.
  5. Pour the egg mixture into the muffin cups.
  6. Bake for 20 minutes.
