Healthy Mixed Vegetables Rice Ball

Ingredients

  • 1/2 cup steamed basmati rice
  • 1/2 tomato (diced)
  • 1 cup spinach (finely chopped)
  • 1 small piece pumpkin (with skin leave on)
  • 3 slices radish (finely chopped)

Steps

  1. Put all ingredients to steam; steaming time as followed:
  2. -rice: 25minutes
  3. -radish & pumpkin: 10-12minutes
  4. -tomato & spinach: 3minutes
  5. Let stand until cool enough to handle, about 10minutes. Squeeze using spoon to drain water of ingredients and put aside. Mash tomatoes and scope out pumpkin, remove skin.
  6. Lay the rice flat on a medium size plate. Mix ingredients with the rice and mix well.
  7. -due to the steaming, the mixture should be moisture enough to handle. If too dry only add water of ingredients in no.2
  8. Use damp hands, form the mixture into 1 1/2inch size balls. Serve warm or at room temperature.
  9. Yield: 20+ rice balls

Extra notes

(1) There is no seasonings added. Some suggestions would be to add pepper or natural herbs.
(2) To make the rice ball hold better and rounder, alternative way is to use a cling wrap.
