Mini zucchini cheese bites

Ingredients

  • 2 cups grated zucchini (about 1 medium) (no need to peel)
  • 1 egg
  • 50 grams grated Parmesan cheese
  • 1/4 cup chopped coriander
  • Pepper

Steps

  1. Pre heat oven to 200 degrees C. Spray a mini muffin pan with non-stick cooking spray well.
  2. Add to the cheese and coriander the pepper and egg - stir with a fork to mix. (don't need salt as the cheese is salty enough)
  3. Lay a couple of sheets of paper towel on to a plate - put chopped zucchini on top of paper towel. Dab excess moisture out of zucchini by pressing another couple of paper towels on top of zucchini.
  4. Mix zucchini into the cheese, coriander and egg mix.
  5. Evenly divide the mixture into the mini muffin pan filling to the top, packed down in each up. Bake for 15-18 minutes until golden brown around the edges.
  6. These are crispy on the outside and soft on the inside. Recipe can be doubled.
  7. These are best served hot.
