Pumpkin curry chicken (toddler friendly)

Ingredients

  • 1 big red onion
  • 2 cloves garlic
  • 1.5 cup of chopped pumpkin
  • 2 potato cut in pieces
  • 1/2 chicken cut in pieces
  • 100ml Coconut milk
  • 200ml water
  • 1.5 tablespoon homemade chicken stock powder
  • Curry leaves
  • 2 stalks Lemongrass
  • 1 tablespoon Lime juice

Chicken marinade

  • 1 tablespoon homemade chicken stock powder
  • 1.5 teaspoon turmeric powder
  • curry leaves
  • Marinade the chicken with the above ingredients overnight in the fridge

Steps

  1. Roast the pumpkin in the oven at 200 degree C for about 25 mins or till it become tender. Mash or blend it and set aside.
  2. Blend red onion and garlic.
  3. Heat oil and stirred fry the blended onion and garlic till fragrant.
  4. Pour in chicken and stirred fry the chicken for about 10-15 mins.
  5. Add in pumpkin, 100ml coconut milk, 200ml water , 1.5 tablespoon chicken stock powder, curry leaves and lemongrass.
  6. Remain medium heat till it come to boil, then turn to small heat and simmer for 15 mins. (You can add in potatoes at this stage and simmer together if you prefer softer potatoes)
  7. Add in potatoes and close lid then simmer for another 30 mins.
  8. Lastly, add in lemon juice.
