Pumpkin vege fried rice

The above ingredients serving is for small family of two adults and one 31 month old boy.

Ingredients:

carrot
Pumpkin
broccoli
cauliflower
3 eggs
overnight fridge rice
chopped garlic

Method:

1. Boiled carrot,pumpkin,broccoli and cauliflower for about 4-5 mins till soften.
2. Carrot,broccoli and cauliflower chop into small pieces.
3. Mashed the pumpkin.
4. Separate the egg white and egg yolk, then mix the egg yolk into the overnight fridge rice till well combined.
5. Heat some oil in a pan, pan fried chopped garlic till fragrance and then pour in the egg yolk rice and stirred fried it. Slowly add in the mashed pumpkin batch by batch till well combined while stirred frying.
6. Lastly, pour in all the chopped vege and stirred fried till evenly mixed.
