Steamed wholemeal pumpkin muffin with oats topping (sugarless)

Ingredients

  • Dry ingredients -
  • 1/4 cup all purpose flour
  • 1/4 cup wholemeal flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Wet ingredients -
  • 2 eggs (beaten)
  • Pumpkin puree from 2 slices of small pumpkin (about a medium size banana)
  • 1 Tbsp olive oil

Steps

  1. (1) Mix wet ingredient and dry ingredients separately.
  2. (2) Pour the wet ingredients onto dry ingredients and begin to fold till all just mix.
  3. (3) Pour into cupcake liners lined in ramekins. Top with some raw rolled oats.
  4. (4) Steam in preheated steamer in high heat for 12 minutes and medium heat for 3 minutes. Wait for 2 minutes before removing the lid. Tilt open the lid slightly for 1-2 minutes before dish out.
  5. Yields: 5 muffins
