Ingredients
- Rm2 coconut milk (around 200ml)
- 1 cups pumpkin puree
- 1/2 cup chicken stock
- 1/2 tablespoon curry powder
- 1 teaspoon garam masala
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/4 large onion, diced
- 1 garlic clove, minced
- 1 carrots, cut into pieces
- 1 sweet potatoes (cut into cubes)
- 2 chicken thighs (cut into pieces)
- Juice of 1/2 lime
Steps
- In the insert of a 2 quart or larger slow cooker, add the coconut milk, pumpkin puree, chicken stock, curry powder, garam masala, salt, and pepper. Whisk together to make sure it is all combined and spices are evenly distributed.
- Add the onion, garlic, carrots, sweet potatoes, chicken thighs and lime juice to the mixture. Stir to coat and incorporate.
- Cook on low for 6 hours / high 3 hours (I am use pensonic slow cooker)
Extra notes
To prevent over cooked using slow cooker, make sure ingredient are 2/3 of slow cooker
