Traditional steamed egg cake 鸡蛋糕


  • 5 eggs
  • 230g caster sugar
  • 300g cake flour
  • 100ml 100Plus


  1. Beat all eggs till bubbles, then mix in sugar in 3 batches, beat till the mixture is ribbon stage (when lift up mixer, the creamy white mixture will b able to draw line and the line will take awhile to disappear)
  2. sift in flour, mix well
  3. pour in 100plus and mix well
  4. Pour into 8 inches baking pan, which is covered with grease paper. Take few pinch of sugar and put the sugar in cross line to get the cross on cake surface, more sugar deeper line, steam at high heat for 30mins

During olden days, 100plus or any other carbonated drinks (plain color) act as bicarbonate soda
